This week, dinner kicks off in Italy with a garlicky prawn and tomato pasta (this is actually my boyfriend's recipe!), then heads to Southeast Asia for a homemade chicken satay. Midweek is a build-your-own burrito night with smoky chipotle pork, followed by a cosy tomato soup with crispy cheese quesadillas for dunking, and we finish back home with good old-fashioned pork rissoles, mash and a creamy leek and mushroom sauce.

Five proper dinners for 2 to 3 people, with everything used up by the time the week is out!

The pack of pork mince is split straight down the middle, half for the burritos and half for the rissoles, and grating veg into the rissoles makes that half go a really long way. One block of cheese covers both the quesadillas and the prawn pasta, the three tins of tomatoes go two into the soup and one into the pasta, and the pack of six flatbreads is shared between the burritos and the quesadillas. Even the slaw from burrito night gets tucked into the quesadillas the next night.

I love the fact that these dinners really do use everything you buy. It actually makes me so happy when I open the fridge and don't see things getting old, sad, or, God forbid, rotting at the bottom of the drawer. And if something is left over, I always work it into the next week's dinners, which is why you'll often see a list of extras in case it's your first week here.

And the prawns? Just half the bag, cut into small pieces so you get prawn in every mouthful. The other half goes straight back in the freezer for another week.

 

Tip of the week

Making your own peanut butter from blanched peanuts is so easy. Roast them at 170°C until a rich golden colour, blend in a food processor for about 10 minutes until smooth, and keep some back to chop and fold through. It's a great way to get a little more for your money, as you can often get a bigger bag of peanuts for less than a jar of peanut butter. Plus, it means you can have it EXACTLY the way you like it. The question is, though, are you a chunky or a smooth fan? Me, I like it chunky.
