This slice starts with a quick caramel base made from brown sugar and water, layered with juicy peaches and topped with a soft, buttery batter. It’s baked until golden and fragrant, easy to make, beautiful to serve, and perfect to share.
Ingredients
100g brown sugar + a splash of water (for the caramel base)
150ml vegetable oil
175g soft light brown sugar
410g tin peach slices in juice (drained and patted dry)
3 eggs
150g plain flour
2 tsp baking powder
Optional: a few sprigs of fresh thyme
Optional: flaked almonds or chopped nuts
Method
- Preheat the oven:
Set your oven to 180°C and line a baking tray with baking paper. - Make the caramel base:
Melt the brown sugar with a splash of water in a small saucepan. Let it cook for 3–5 minutes until slightly thickened, then pour it into your lined tray. Scatter over a few thyme leaves (optional) and arrange the peach slices neatly on top. - Make the batter:
In a mixing bowl, whisk together the vegetable oil and soft brown sugar. Add the eggs one at a time and whisk until smooth. - Combine the dry ingredients:
Sift in the flour and baking powder, then gently fold through with a spatula. If you’ve got extra peaches, crush and fold them in for extra flavour. - Assemble and bake:
Pour the batter over the peaches, spreading evenly. Sprinkle with flaked almonds or nuts if using. Bake for 30 minutes or until golden and a skewer inserted in the centre comes out clean. - Cool and slice:
Let it cool in the tin for 15 minutes before slicing into 12–14 squares.
Chef’s Tip
This Peach Slice keeps well in an airtight container for up to four days. Try it slightly warm with a dollop of yogurt or a scoop of ice cream for an easy dessert.
