Chocolate Self-Saucing Pudding
A classic, comforting dessert that magically creates its own rich, chocolatey sauce as it bakes. Light, fluffy sponge on top with a gooey, molten layer beneath. Perfect with a scoop of homemade ice cream (see my easy ice cream recipe from this week’s desserts!).

Let’s learn how to make it.
This simple pudding uses pantry staples and comes together in under an hour. The sauce forms as it bakes, giving you that perfect spoonful of warm sponge and silky chocolate sauce.
Ingredients
For the pudding:

2 eggs, at room temperature

110g soft brown sugar

100g plain flour
-
1 tsp baking powder
-
10g cocoa powder
-
1½ tbsp hot water
-
2 tsp vegetable oil
For the sauce:
-
310ml boiling water
-
100g brown sugar
-
20g cocoa powder
Method
1. Preheat the oven:
Set your oven to 180°C and lightly grease your ovenproof dish.
2. Whisk the eggs and sugar:
In a large bowl, whisk the eggs until frothy and pale. Add the brown sugar and continue whisking for 2 minutes until thick and creamy.
3. Add dry ingredients:
Sift the flour, baking powder, and cocoa powder over the egg mixture.
4. Add wet ingredients:
Pour in the oil and hot water, then gently fold everything together until just combined.
5. Pour into dish:
Transfer the batter into your prepared baking dish, smoothing out the top.
6. Make the sauce:
In a separate bowl, combine the boiling water, brown sugar, and cocoa powder. Stir until the sugar dissolves.
7. Pour over the pudding:
Carefully pour the sauce over the back of a spoon onto the batter. This helps it spread evenly without creating holes in your pudding.
8. Bake:
Place in the oven and bake for 35–45 minutes, depending on your dish size. A shallow dish will bake faster (around 35–40 mins).
9. Rest and serve:
Let the pudding stand for 10 minutes before serving to allow the sauce to settle.
10. Serve it up:
Dust with cocoa powder or icing sugar and serve warm with a scoop of homemade ice cream.
Chef’s Tip
The magic of this pudding is in the sauce, don’t over bake it! You want that gooey layer underneath. Try adding a pinch of instant coffee to the sauce for a mocha twist.
