How to Put the Meal Together
The night before (or morning of):
- Marinate the chicken in the spiced yoghurt, ideally overnight and at least 2-3 hours ahead
1 hour before serving:
- Make the flatbread dough and leave to rest for 15 minutes
- Make the yoghurt dressing and pop it in the fridge
- Roll out and pan-fry the flatbreads
- Keep cooked flatbreads wrapped in a tea towel to stay warm and soft
30 minutes before serving:
- Cook the marinated chicken (BBQ for best results, or bake at 200°C for 25-30 minutes)
To serve:
- Slice the chicken, warm the flatbreads if needed, and drizzle everything with the yoghurt dressing

What if I don't have self-raising flour? Make your own: combine 350g plain flour with 31⁄2 teaspoons baking powder and 1⁄2 teaspoon salt.
Can I use chicken breast instead of thighs? Yes, but thighs stay more tender and juicy when marinated. If using breast, keep a close eye on it so it doesn't dry out.
