Crispy Crunchy Air Fryer Chips

Golden, crunchy, and outrageously good — these air fryer chips are the closest you’ll get to deep-fried without the actual deep fry. Minimal oil, maximum crunch. And it only takes 3 easy steps.

If you're a chip lover (who isn’t?), this one is a game-changer. These chips are creamy in the middle and crispy as anything on the outside thanks to a clever combo of boiling, cornflour, and a hot air fryer. Let's get into it.

Ingredients

  • 3–4 large roasting potatoes (look for red-skinned or yellow flesh, suitable for roasting)

  • 1 tsp salt (for boiling)

  • 1 tsp cornflour or cornstarch

  • ½ tsp Italian herbs (optional)

  • Salt and pepper to taste

  • 1 tbsp neutral oil (or spray oil)

  • Optional: Kewpie mayo, ketchup, or your favourite dip to serve

Method

  1. Cut & Soak
    Slice the potatoes into thick chips or wedges — aim for even size so they cook consistently. Place them into a pot of cold water with a good pinch of salt.

  2. Boil the Chips
    Bring the pot to a gentle boil and simmer for 6–9 minutes depending on chip size. You're aiming for just cooked on the outside, almost cooked in the middle, but still holding their shape. Drain well.

  3. Rough Them Up
    Shake the cooked chips in the colander or pan to rough up the edges. This step is key for that crispy exterior. They should look a little starchy and fluffy on the surface.

  4. Coat the Chips
    In a large bowl, toss the chips with cornflour, a pinch of Italian herbs (if using), salt and pepper. You want a thin, even dusting — about 1 tsp of cornflour total.

  5. Preheat & Oil
    Preheat your air fryer at 190°C (375°F) for 2–3 minutes. Then either spray or drizzle your chips with the oil and give them a good shake or toss to coat.

  6. Air Fry
    Cook in the air fryer at 190°C for 15–20 minutes, shaking halfway through. They should come out golden, crisp, and irresistible.

  7. Serve Immediately
    Don’t leave them sitting in the air fryer drawer once done — open it right away to avoid steam softening them. Plate up with a bit of Kewpie mayo or ketchup and enjoy!

Chef’s Tip:
The key to crispiness is the combo of the rough edges + cornflour + hot air fryer. Don’t skip the boil — it transforms them!
