This stir-fried noodle dish is all about speed and flavour. Tender pork strips are marinated to keep them juicy, then tossed with colourful veg, springy noodles, and a rich sauce. Topped with a fried egg, it’s a budget-friendly meal that feels like a takeaway treat.
Ingredients

250–350g pork stir-fry strips (cheapest cut available works fine)

1 tbsp bicarb soda

1 tbsp cornflour
-
2–3 tbsp soy sauce (divided)

Noodles (enough for 2–3 people)

1 onion, sliced
-
1 carrot, julienned
-
1.5 heads of bok choy, leaves separated
-
Small knob of ginger, grated
-
2–3 cloves of garlic, grated
-
2 tbsp tomato ketchup
-
2 tbsp hoisin (or oyster sauce / sriracha)

50ml water
-
Black pepper, to taste

1 egg per person
Method

Marinate the pork: Mix the pork with the bicarb soda, 1 tbsp soy sauce, and a splash of water. Chill in the fridge for at least 15 minutes to tenderise.

Prep everything: Slice the onion and carrot, grate the ginger and garlic, and separate the bok choy leaves. Blanch the noodles until just cooked, then drain.

Make the sauce: In a small bowl, combine 2 tbsp soy sauce, ketchup, your chosen sauce (hoisin, oyster, or sriracha), a generous crack of black pepper, and 50ml water. Set aside.

Cook the pork: Rinse the marinated pork under water. Toss with cornflour and a splash of soy sauce. Heat a wok or large pan until very hot, sear the pork until golden, then remove from the pan.

Stir-fry the veg: Add the onion, carrot, garlic, and ginger to the pan. Cook briefly, keeping a little crunch.

Bring it together: Add the noodles and sauce, toss everything well, then stir in the bok choy leaves until just wilted. Return the pork to the pan and mix through.

Serve: Fry an egg for each person and serve on top of the noodles.
