One of the best things to do with leftover mashed potato, crispy, golden, and so good you’ll never want to waste mash again! This quick potato bread is perfect for using up what’s left in the fridge and turning it into something delicious.

Leftover mash often sits in the fridge waiting to be thrown out, but not today. With just a handful of simple ingredients, you can turn it into warm, golden flatbreads that are crisp on the outside, soft in the middle, and the perfect side for soups, stews, or even lunch the next day. You can also throw in extra bits from the fridge like herbs, spinach, or cheese to take it up a notch.
Ingredients

375g plain flour

112g leftover mashed potato

16g unsalted butter (or 1 tbsp veg oil as an alternative)

Pinch of salt

Optional add-ins: spring onions, spinach, grated cheese, or leftover herbs
Method

In a large bowl, combine the flour, mashed potato, butter, and a pinch of salt.

Mix together until it forms a dough. If it feels too dry, add a tiny splash of water; if too wet, a little more flour.

Add any extras you have on hand — spinach, herbs, or cheese all work beautifully.

Give the dough a quick knead, then roll or press it out into a flat round about 1cm thick.

Heat a dry pan over medium heat and cook the bread for 3–4 minutes on each side until golden and crisp.

Once cooked, rub just a little butter over the top to make it shine.
Chef’s Tip: This potato bread is amazing alongside a veggie soup, or you can cut it into wedges and serve it with dips for an easy lunch.
