Broccoli & Blue Cheese Soup – Creamy, Comforting & Packed with Flavour

Creamy, savoury, and just the right amount of indulgent, this broccoli and blue cheese soup is the ultimate winter warmer. It’s fast, flavourful, and one of the easiest ways to turn a head of broccoli into something truly delicious. Grab your blender — this one’s a keeper.

Ingredients

1 tbsp olive oil
1 onion, chopped
2 garlic cloves, sliced
1 large head of broccoli (stalk and florets), chopped
800ml vegetable stock
75g blue cheese (stilton or gorgonzola)
Optional: splash of cream or milk
Salt & pepper, to taste

Method

1. Build Your Flavour Base
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and sliced garlic, and sauté gently for 5–6 minutes until softened and fragrant — no colour.

Sweating the onions brings out their natural sweetness, giving your soup more depth.

2. Cook the Broccoli
Add the chopped broccoli, using both the florets and stalks.
Pour in the stock, bring to a simmer, and cook for 10–12 minutes until the broccoli is tender.

Broccoli stalks are packed with flavour — just peel any tough bits first if needed.

3. Blend & Finish
Take off the heat and carefully blend the soup until smooth (using a stick blender or in batches).
Stir in the blue cheese until melted. Add a splash of cream or milk for extra richness if you like.
Season to taste with salt and pepper.

The cheese adds plenty of salt, so taste before adding more.

4. Serve It Up
Ladle into warm bowls and serve hot with crusty bread, toasted seeds, or a swirl of cream.

Serving Notes
This soup keeps well in the fridge for up to 3 days and freezes like a dream. Reheat gently and stir before serving. Great for lunch, dinner, or whenever you need a comforting bowl of something green and good.
