Summer Rolls with Spicy Peanut Dipping Sauce
These vibrant, fresh summer rolls are the perfect fridge-clearer — filled with crunchy veg, soft noodles, and juicy prawns. Dunked in a salty-sweet-spicy peanut sauce, they’re fun to make, even better to eat, and endlessly customisable.

This is the ultimate “use what you’ve got” kind of dish. As long as you have rice paper and some crunchy veg, you’re halfway there. They’re light, colourful, and totally moreish — and that dipping sauce? It’s addictive.
Ingredients
For the summer rolls

Cooked prawns (or your protein of choice)

Carrot, julienned

Courgette, julienned
-
Lettuce leaves
-
Fresh coriander
-
Spring onion, thinly sliced
-
Sesame seeds (optional)

Rice paper wrappers
Note: Use whatever crunchy veg and herbs you have — these are just what I had in the fridge!
For the spicy peanut sauce

1 tsp peanut butter
-
½ tsp brown sugar
-
1 tbsp soy sauce
-
½ tbsp fish sauce
-
1 tbsp lime juice
-
Finely chopped red chilli (adjust to taste)
Method

Prep your fillings:
Slice all your vegetables into thin matchsticks, and wash your herbs. Lay everything out in front of you — the rolling process moves fast once you start. -
Soften your rice paper:
Fill a large shallow bowl with room-temperature water. Soak one rice paper for 10–15 seconds until soft and pliable. Carefully lift it out and lay it on a clean, damp surface (wetting the bench slightly helps stop sticking). -
Build your roll:
Place a small handful of noodles and your chosen veg and prawns in the centre. Sprinkle with sesame seeds if using. Fold the bottom edge over the filling, then fold in the sides, and roll up tightly from the bottom — like a burrito. Repeat with the remaining wrappers and fillings. -
Make the peanut sauce:
In a small bowl, whisk together peanut butter, brown sugar, soy, fish sauce, lime juice, and chilli. Taste and adjust — you want a perfect balance of salty, sweet, spicy, and sour. -
Serve:
Slice your summer rolls in half with a sharp knife and serve with the dipping sauce on the side. Best enjoyed fresh!
Chef’s Tip
If your rice paper feels too sticky while rolling, wet your hands slightly — it’ll help smooth out any wrinkles and keep things tidy.
