300g pork mince

1 carrot, grated
-
½ onion, finely diced
-
1 tsp cumin
-
½ tsp smoked paprika
-
Salt and pepper
For the Chips:
-
4 potatoes, cut into chips
-
Olive oil
-
Salt
For the Cucumber Yoghurt:
-
½ cucumber, diced
-
125g natural yoghurt
-
1 tsp dried dill
-
Salt and pepper
For the Salad:
-
1 bag of slaw (precut, great value and full of crunch)
-
¼ packet of feta cheese, crumbled
-
½ avocado, sliced
-
A few cherry tomatoes, halved
-
Olive oil
-
Lemon juice
-
Salt and pepper
Method
-
Prep the chips: Cut the potatoes into chips and toss with a drizzle of olive oil and a pinch of salt. Air fry until golden and crispy. (If you want perfect chips, check out my air fryer chip video, they’re incredible!)
-
Make the meatballs: Dice the onion and grate the carrot. Add them to a bowl with the pork mince, cumin, smoked paprika, and seasoning. Mix well, then shape into small meatballs.
-
Cook the meatballs: Air fry the meatballs until golden brown and cooked through. (No mess and so easy!)
-
Make the cucumber yoghurt: In a small bowl, combine the diced cucumber, yoghurt, dill, and a pinch of salt and pepper. Stir well.
-
Assemble the salad: In a large bowl, mix the slaw, avocado, cherry tomatoes, and feta. Drizzle with olive oil, a squeeze of lemon juice, and a pinch of salt and pepper.
-
Serve: Load up your plate with chips, meatballs, salad, and a generous dollop of cucumber yoghurt.
Chef’s Tip:
You can swap the pork mince for chicken, beef, or even lentils for a vegetarian version. Try warming some pita bread on the side, it’s perfect for scooping everything up.
Enjoy
