Cheesy Crispy Spring Roll Bites
These cheesy spring roll bites are golden, crunchy, gooey, and dangerously moreish. Rolled in shredded pastry for the ultimate crispy coating, they’re the perfect snack to make in the air fryer — no deep frying needed. Think spicy cheese bombs in crispy little nests.

These are like cheesy arancini’s crispy cousin — but way easier. With a creamy two-cheese filling and a chilli crunch kick, they’re wrapped in shredded spring roll wrappers and air-fried to golden perfection. A chilli mayo dip on the side makes them completely irresistible.

Ingredients

For the crispy bites:

  • 3–4 spring roll wrappers

  • 2 tbsp cream cheese

  • 2 tbsp grated cheddar or mozzarella

  • 1 spring onion (green top only), finely sliced

  • 1 tsp chilli crisp or chilli crunch

  • Freshly ground black pepper

  • Oil spray, for air frying

For the dip:

  • 2 tbsp mayonnaise

  • 1 tsp chilli crisp

Method

1. Shred the wrappers
Take a few spring roll wrappers, roll them up tightly, then finely slice into thin strands. This will form your crispy coating. Set aside.

2. Make the filling
In a small bowl, combine the cream cheese, grated cheese, chopped spring onion, chilli crisp, and a little black pepper. Mix until smooth and well combined.

3. Form the bites
Take small spoonfuls of the cheese mixture and press into flat little mounds. Place them one by one into the shredded wrapper strands, covering completely so they look like mini nests.

4. Prepare the air fryer
Line your air fryer basket with a piece of parchment paper — this stops any oozy cheese escaping and makes for easy clean-up. Place the spring roll bites in, leaving a little space between each one.

5. Air fry
Spritz generously with oil to help the wrappers crisp up beautifully. Air fry at 180°C for 6–7 minutes, or until golden and crunchy on the outside.

6. Make the dip
While they cook, mix together the mayo and chilli crisp in a small bowl.

7. Serve
Spoon the chilli mayo onto a plate, top with the hot spring roll bites, and sprinkle with a pinch of flaky salt if you like. Eat immediately while gooey and golden!

Chef’s Tip
Make a batch ahead of time and sit them all in the fridge, ready to go for when your guests arrive!
