Simple Egg Fried Rice
The perfect way to turn leftover rice into something special — this quick egg fried rice is savoury, satisfying, and comes together in minutes with just a handful of ingredients.

Day-old rice is your best friend here. With a hot pan, a single egg, and a splash of soy, you’ll have a warm bowl of comfort in under 10 minutes. It’s a brilliant base, or a simple meal on its own.
Ingredients

1 egg

150g cold, cooked rice (leftovers are perfect)

1 spring onion
-
1 tsp toasted sesame oil

1–2 tbsp soy sauce

Flaky sea salt
-
1 tsp toasted sesame seeds, plus extra to serve
Method

Prep your ingredients:
Slice the white part of the spring onion in half lengthways and finely dice. Slice the green tops into thin rings and set aside. Crack the egg into a bowl and beat it well. -
Heat the pan:
Place a non-stick or well-seasoned pan over high heat. Add the sesame oil and let it get hot. -
Sauté the aromatics:
Add the diced white spring onion and cook for less than a minute — just until fragrant. -
Add the rice:
Tip in your cold cooked rice, breaking it up with a spatula so the grains separate. Fry for about a minute, stirring constantly. -
Scramble the egg:
Push the rice to one side. Add a touch more oil if needed, then pour in the beaten egg. Let it just start to set, then scramble and stir it into the rice. -
Finish and serve:
Add soy sauce, toasted sesame seeds, and a sprinkle of flaky sea salt. Stir everything together, then top with the sliced green spring onion and a final pinch of sesame seeds.
Chef’s Tip
Cold rice fries best — fresh, hot rice will clump and steam. Spread leftover rice on a tray and chill it in the fridge for the perfect texture.
