Day-old rice is your best friend here. With a hot pan, a single egg, and a splash of soy, you’ll have a warm bowl of comfort in under 10 minutes. It’s a brilliant base, or a simple meal on its own.

Ingredients

  • 1 egg

  • 150g cold, cooked rice (leftovers are perfect)

  • 1 spring onion

  • 1 tsp toasted sesame oil

  • 1–2 tbsp soy sauce

  • Flaky sea salt

  • 1 tsp toasted sesame seeds, plus extra to serve

Method

  1. Prep your ingredients:
Slice the white part of the spring onion in half lengthways and finely dice. Slice the green tops into thin rings and set aside. Crack the egg into a bowl and beat it well.

  2. Heat the pan:
Place a non-stick or well-seasoned pan over high heat. Add the sesame oil and let it get hot.

  3. Sauté the aromatics:
Add the diced white spring onion and cook for less than a minute — just until fragrant.

  4. Add the rice:
Tip in your cold cooked rice, breaking it up with a spatula so the grains separate. Fry for about a minute, stirring constantly.

  5. Scramble the egg:
Push the rice to one side. Add a touch more oil if needed, then pour in the beaten egg. Let it just start to set, then scramble and stir it into the rice.

  6. Finish and serve:
Add soy sauce, toasted sesame seeds, and a sprinkle of flaky sea salt. Stir everything together, then top with the sliced green spring onion and a final pinch of sesame seeds.

Chef’s Tip
Cold rice fries best — fresh, hot rice will clump and steam. Spread leftover rice on a tray and chill it in the fridge for the perfect texture.
